I just got home from work and was craving something savory without a lot of calories (I had some walnuts and a protein shake at work today in between client).
After looking around in the fridge for a while I decided I would experiment and make a Mexican Pita Pizza.
Mexican Pita Pizza
What you’ll need: 1 whole wheat pita, pepper jack cheese (organic if you can), hot pickled peppers, your favorite salsa and green onions.
Turn the broiler on high.
Spread your favorite salsa onto the pita
Sprinkle on the Hot Pickled Peppers (I love these)
Next add some cheese (I usually would have shredded the cheese- I think you use less when its shredded- but didn’t shred it today).
Add the green onions
Broil on high for 5-8 minutes or until the cheese is melted.
Serve and enjoy!
The Husband and I shared this and loved it! My only change for next time would be broiling the pita for a hew minutes before putting the salsa on it. I think it would have come out a bit more crispy on the bottom.

I think we are heading out to grab a cocktail and an app! There is a restaurant called Firehouse that has a great happy hour starting at 3pm. We usually go once every two weeks, typically a Saturday, for a glass of wine and calamari. They have the most amazing calamari I’ve ever had! We are so excited to show the Husband’s parents the calamari and enjoy this rain with a good glass of wine! This is a great Tuesday!
