Sunday Football Funday

So last night I was snoozing away when the fire alarm in our bedroom went off.  It was so loud and kept turning on and off.  Finally after a few minutes, the Husband got out of bed and checked the whole house….nothing, no fire or smoke anywhere.  After it finally went off, I couldn’t fall back to sleep.  It was 3:30 and I actually felt rested.  I think I laid awake in bed until around 5am and then drifted back to sleep until 7am.

Since we live in Arizona, football comes on at 10am.  That means we need to be showered and to our friends house by that time (that’s early for a Sunday, but the Hus wants to watch the Redskins and Green Bay game).  We were trying to come up with a some what healthy appetizer to bring over.  After thinking about it for 2 days I think we settled on Shrimp Cocktail.  It’s a good, healthy snack and packed with protein.

This morning for breakfast I had a slice of toast with drum roll please, Pumpkin Butter!  Finally a change after having PB toast for probably a good portion of the past 2 months!  And, it was so delicious!  Simply amazing!  I was really looking forward to making pancakes or waffles, but didn’t have eggs, milk, soy milk, almond milk or anything that could be substituted for those ingredients.

Fall Delights

So, I am back from the grocery store.  It wasn’t as crowed as I thought it would be, but I did have to go to three stores to find everything I needed.  After I posted my grocery list on here,   I decided to make Pumpkin Butter and Apple Crisp and need some extra items.  I printed the recipes and just added the items I knew I needed, which wasn’t much.

Festive Fall Pumpkin Butter

I am so excited to eat this stuff.  I am sure I will be making it many times this fall.  It is so easy to make and tastes so good!  I can’t wait to spread it on everything I can think of like scones, ginger snaps and toast!

I found this recipe on a blog named Oh She Glows (which is a fabulous blog I love to read).  I did change the recipe slightly. 

Ingredients:

  • 2 (15oz) cans pumpkin puree
  • 1 cup apple juice
  • 1 1/2 teaspoons ground ginger
  • 1/2 teaspoon cloves
  • 1 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Juice of half of a lemon

Directions:  Mix together pumpkin puree, apple juice and all spices really well.  Bring to a boil.  Reduce to a simmer for 30 minutes, stirring frequently.  Remove from heat and stir in the lemon juice.  Add spices to taste.  Once the pumpkin butter is cool, it can be kept in airtight containers in the fridge.  Yield about 3.5 cups.

Start out with the pumpkin, add it to a saucepan

Next, add brown sugar

Followed by the spices

Bring to a boil and then let simmer.  Make sure you are stirring often

Add 1/2 lemon and stir some more

Take the pan off the heat and let cool.  Once its cool, transfer to airtight containers and refrigerate

YUM!  I want waffles with pumpkin butter for breakfast tomorrow morning! 

I am thinking about making the Apple Crisp tomorrow.  We were planning on having it tonight for dinner but were too full off salads for dessert!

Dinner tonight was Apple Gorgonzola Salad- again!  I can’t get enough of the flavor of this thing! 

I sautéed the chicken breast on the stove- I added fresh ground black pepper and garlic seasoning along with about 1/3 cup Annie’s Roasted Garlic Salad Dressing.

Next it was time to cut the red onion, apples and chop the walnuts

I used 2 small Granny Smith apples

The Husband helped with dinner by chopping the lettuce and pouring some red wine!  : )

Once everything was chopped and cooked, the salads were ready to be made.

Start with lettuce

Tomorrow we are planning on going to a friends house to watch some football and making some Apple Crisp.  Yay!
