So last night I was snoozing away when the fire alarm in our bedroom went off. It was so loud and kept turning on and off. Finally after a few minutes, the Husband got out of bed and checked the whole house….nothing, no fire or smoke anywhere. After it finally went off, I couldn’t fall back to sleep. It was 3:30 and I actually felt rested. I think I laid awake in bed until around 5am and then drifted back to sleep until 7am.
Since we live in Arizona, football comes on at 10am. That means we need to be showered and to our friends house by that time (that’s early for a Sunday, but the Hus wants to watch the Redskins and Green Bay game). We were trying to come up with a some what healthy appetizer to bring over. After thinking about it for 2 days I think we settled on Shrimp Cocktail. It’s a good, healthy snack and packed with protein.
This morning for breakfast I had a slice of toast with drum roll please, Pumpkin Butter! Finally a change after having PB toast for probably a good portion of the past 2 months! And, it was so delicious! Simply amazing! I was really looking forward to making pancakes or waffles, but didn’t have eggs, milk, soy milk, almond milk or anything that could be substituted for those ingredients.
I highly recommend the pumpkin butter recipe.
