Hey guys! Here is a recap of my Monday so far. I went to the gym first thing this morning and just did some light cardio to get back into the swing of working out hard! It went well and I’m excited to workout again tomorrow morning! I’m making all week cardio week in the gym to get my running back to where it was pre-holidays. I’m hoping to run 9 miles on Saturday for my Sedona 1/2 marathon training!
Breakfast was 2 eggs in a tortilla with hot sauce. Also a little coffee on the side.
Motivation for the Day: Get as much done as I can at work to get organized for the new year.
3 Things I’m Thankful for Today: 1- Quincy, my favorite little puppy in the world 2- First workout of the New Year is over and I really enjoyed it 3- Getting back into a routine. I’m a creature of habit and the Holidays also take a toll on me.
Goal for the Day File away the pile of things that are shoved in my daily planner once and for all.

Am snack was a toasted Ezekiel Pita with organic jalapeno hummus. I ran home to take the puppy out so I took advantage of the kitchen to make my am snack. I also had a handful of walnuts at work before I got home.
Lunch was a simple whey protein shake made with water at work. PM snack was a strawberry Chobani. So good.
For dinner, I had to get creative in the kitchen. We haven’t gone grocery shopping and are lacking big time on the essentials. So, I made Apple and Gorgonzola Salad with a side of Spicy Pasta.
You can use whatever meat you would like, or make this a vegetarian pasta by using tofu.
Whole Wheat Noodles- use whatever you have on hand or your favorite type of noodle
Crushed Red Peppers 4tbsp <- you can use less if you can’t handle really spicy foods
4-6 Cups Spinach
1/2 Medium Red Onion Thinly Sliced
Spicy Jalapeno Chicken Sausage or any other meat/tofu you prefer
Thinly Sliced Red Bell Pepper <- Our bell pepper had spoiled so I couldn’t use it, but next time I would add this
Black Pepper to Taste
2tbsp Olive Oil
2tbsp Chopped Garlic
1/2 Cup Shredded Pepper Jack Cheese (optional)
Cook the noodles and drain. In a sauté pan, add olive oil, chopped garlic, red onion, sliced cooked meat.tofu (optional)black pepper and crushed red peppers. Heat on medium low heat until onions are cooked. Add pasta and mix the ingredients together. Once the mixture is heated thru, add the spinach, stirring occasionally until the spinach is fully cooked. Serve immediately and sprinkle with pepper jack cheese. Enjoy!
Just an FYI- we buy our chicken sausages, organic whole wheat pasta and organic spinach all at Costco for a steal of a deal.
This quick and easy meal is packed with protein and fiber to keep you feeling full longer.
Serve with a salad and you’ve got yourself a balanced healthy dinner!
