Tonight for dinner I whipped up a batch of pasta. We planned on having Asian Salad for dinner, but both the Husband and I were starving and wanted something a little more hearty.
This pasta is pretty much the same as all my pastas. I like to make the sauce my own by adding in vegetables and other fun spices!
Here is what I did:
While the pasta was boiling, I looked through the fridge for all the vegetables I thought would be good in the garlicky pasta sauce. I washed and chopped 1/2 red onion, 1/2 white onion, 2 cups baby bella mushrooms. I also pulled out the spinach, because what would pasta be without gobs of spinach? Once the first three vegetables were in the pan sautéing, I added about 6 tbsp of minced garlic. Luckily I don’t train any clients tomorrow! : ) Next, I sliced some chicken that was left over from last night’s salad and added that to the pan. Once the chicken was heated and the vegetables were soft, I added about 10 cups of spinach. It took a few minutes to get melted down, and once it did, I added to pasta sauce. Once the sauce was heated, and the noodles cooked and drained, dinner was served. I seriously love how simple and easy this meal is. Plus we have leftovers for dinner tomorrow or Thursday and that makes my life easier!
Lots and lots of garlic!
Onions and mushrooms have been shown to decrease cellulite. Eat up!
I also added about 6 tbsp of crushed red peppers to raise our metabolisms and give the pasta some heat!
Parmesan for onto of the pasta!
Needless to say, I’m stuffed and can hardly move! Can’t wait to use this as fuel in my AM workout tomorrow! : )
Fun Fact: Eating heated up pasta sauce decreases your risk of skin cancer! Even more reason to satisfy your craving with a big plate of pasta!
The rest of my night will be spent snuggling Quincy and watching last night’s episode of Jersey Shore! Yes, I actually love that show!
