Monday so far…

We woke up late and decided to head to Starbucks for a much needed Pumpkin Spice Latte, the first of the fall season!  After I finished it, I really wasn’t hungry.  We are working from home today so I decided I would wait until I had breakfast.  At around 10:30am I had a slice of Ezekiel bread with peanut butter (PB). 


My favorite PB is Kirkland brand, it is organic and made with only peanuts and salt.  So good!


After I worked on laundry what seemed like forever it was time for lunch.  Since we are working from home today I decided to put a little effort into lunch and made chicken tacos.  I think I got encouraged from Bobby Flay on the Food Network, he made some awesome looking steak quesadillas!  I used organic chicken and added a bunch of spices.  I used, cilantro, crushed red pepper, sea salt and pepper.  I used a little canola oil as well in the grill pan to help grill the chicken.  We had grilled corn tortillas, avocado, grilled red onion, pepper jack cheese and spicy salsa.  


One thing I like to do is buy all cheese in the block form.  I like shredding it on my own depending on when we need it and putting the left over shredded cheese is mini glass bowls with lids.  I feel healthier doing it this way, I think of it as a simple step eliminating plastics from our home.  You can find the mini glass bowls at Crate and Barrel.  They come in a 12 pack and trust me you will use them all the time!  They are one of my favorite items we have in our kitchen!Crate and Barrel- Clear Bowls with Lids



If you don’t know how to cut an avocado I find this method the easiest.  Start out by cutting the avocado in half length wise and removing the seed.  Next, cut each piece in half again length wise.


Once you have your avocado cut into fourths, you should be able to easily peel the skin right off the avocado length wise. 


Today I grilled red onions and they came out great!


Everything is ready!  Time to build a taco!

We ended up having a lot of leftovers and will probably have tacos again for dinner!

    i was just wondering what to have for dinner until i saw this and now Iam SO HAVING MEXICAN!
