I’m so Hungry Today!

After work I headed to the organic grocery store to pick up salad mix and also hummus (the best ever)!  Then I went on to another grocery store to pick up some wine.  Britney Spears is on Glee tonight and I really wanted to have a glass of wine while I watch the show!  A little indulgence for having such a healthy and productive day!  : ) 

Once I got home the husband and me started getting dinner ready (who cares if it was only 4:45pm- we were starving).  While we we preparing dinner, we snacked on celery and the new hummus I brought home.  This is one of my all time favorite snacks.  I love how peppery tasting celery is!


Tonight I baked us salmon and it was so good.  I use a simple recipe that takes no time to make.  Its easy and delicious!

Lemon-Pepper Salmon Recipe                                      Preheat oven to 45o degrees   

You will need the following:  1 piece of salmon, 1 whole lemon, black pepper, sea salt, parsley (fresh or dried will work) and a baking dish.                                   

Place the salmon in the baking dish, skin side down.  Next, cut the lemon in half and squeeze both halves directly onto the salmon.  Season with pepper, sea salt (I only use a tiny bit, you can omit the salt if you wanted) and parsley.  Bake at 450 degrees for 8-10 minutes (times may vary depending on the oven).  Serve and enjoy!

With the salmon we had one of my favorite salads.  I call it Jourdan’s Apple & Gorgonzola Salad.  My sister came up with this recipe and I can’t eat enough of it.

Ingredients:  Salad Mix, red onion, granny smith apple, gorgonzola and walnut pieces (I smash my own to break them down before adding them into the salad).  You can add or eliminate ingredients depending on your specific taste and also what you have on hand in the kitchen.

Add all the ingredients into a bowl and toss.  Serve with your favorite dressing and enjoy!

I went with the Annie’s Roasted Garlic on my salad tonight.  Dinner is served!


One thing I did want to mention in this post is what protein powder I use.  I got asked this question earlier and wanted to address it.  We buy ours at GNC and like both the chocolate and vanilla flavor.  If I bring a protein drink to work I will take the chocolate, mix it with water and drink that.  If I am making a fruit smoothie in the blender, I like to use vanilla, although I love making a pb, banana and chocolate protein powder smoothie that is sinfully delicious  as well.  I’ll try and post the recipes tomorrow.
