Spaghetti….Yum

Tonight when I got home from work I thought it would feel great to take a bath (help relieve my sore muscles) and then sneak in a little cat nap.  Not the case.  I got home and there was plenty for me to get done around the house.  From unloading the dishes, putting away laundry, writing thank you note and cooking dinner, I all of a sudden was busy!  But first it was time to make an appetizer for us to enjoy before dinner. 

We enjoyed a whole wheat pita with crushed red bell pepper, parmesan, sea salt, fresh ground black pepper broiled in the oven for 4 minutes.

We ate it with jalapeño garlic hummus.  Simply amazing!

I decided to cook Spaghetti for dinner after finding the spring mix of lettuce I bought yesterday had already gone bad.  I hate when that happens especially when the Enjoy by Date wasn’t for another 4 days!  Oh well, onto

making spaghetti!

Spaghetti dinners are always fun in our house, and simple to make.  I am a huge pasta fan and love incorporating it into our weekly meals. 

Tonight we had spinach noodles.  I love these noodles!

I combined 2 different pasta sauces to create my own unique blend.  I used a garlic tomato sauce and also a basil tomato sauce.  I also added about 2 heaping tablespoons of minced garlic.  I think garlic is such a great flavor.  Luckily Keith loves it too!

Tonight’s dinner was easy and fuss free- yet healthy!  I will be ready for my early morning workout after eating this meal!

I am so excited because the in-laws, the Husbands parent’s, are coming into town on Saturday.  We don’t get to see them that often so this is a big deal!  I always enjoy having company to our house.  I love spending time drinking wine, playing games and catching up with family and friends when they are in town.  Just relaxing with them… and maybe going for a hike as well to burn off all that wine!  : )
