Tacos and Twins

Tonight is the last night the Husband’s parents are in town.  It is also the first game in the series of Twins versus Yankees.  I am not a huge baseball fan, but do enjoy the occasional game every now and then (I’m a HUGE football fan)!  We decided to take it easy tonight and cook some tacos and just enjoy each others company.

But first, here is what I snacked on during the day.  At work I snacked on some walnuts, 2 dark chocolate Hershey Kisses and a whey protein shake.  I was starving when I got home so I had a turkey wrap.  Our friends Adam, Noel and their baby stopped over and I had one glass of red wine. 


That concludes my snacking, now onto tacos!  Tacos have to be one of my favorite foods.  I just love Mexican food!  I could eat, tacos, burritos and fajitas everyday!  I love that you can make them healthy and include many different vegetables into the meal.  We knew we were going to be making flank steak and decided at the last minute to turn tonight’s dinner into tacos.  Since we were not prepared, we only had cheese, salsa and hot peppers to go on the tacos.  None the less they were amazing!

Between watching baseball and playing with Murphy, the Husband somehow marinated and grilled a flank steak.

I didn’t like the pictures of the flank steak and decided not to post them!

I drained hot peppers (we canned them ourselves and gave them away at our wedding for favors.  They are awesome, if you want the recipe let me know!)


and cooked the raw tortillas.


Lets eat…




and drink!  I stuck with water.


Dinner was amazing and was a fun last meal before the Husband’s parents are driving back to Montana tomorrow.  Now I just need to get back to cheering for the twins!  Go Twins!
