Monday Afternoon

Hey everyone!  I just realized I forgot to mention that last night we snacked on mozzarella cheese sticks with roasted garlic tomato sauce.  I also had a glass of red wine.  I know, I know not the healthiest dinner, but I made up for it today by choosing my food wisely and eating a little bit less.

For lunch today I had a bowl of chicken noodle soup and 1/2 a nitrate free turkey sandwich with lettuce and tomato.

While I was out running errands today, I found some fall treats at Target I had to get to fill our pumpkin treat dishes

I found fall color peanut M&Ms (the Husbands favorite)

The pregame for Monday Night Football just came on and I think we are going to have a pretty chill night.  We are making fajitas for dinner.  I am so pumped because I love fajitas.  I like to use green bell peppers, yellow onion, jicama, mushrooms and avocado.  I can’t wait, there going to be so good!

Fun Fall Days

So, yesterday we went over to a friends house and snacked and drank our way thru two football games.  We stopped at the grocery store on the way to our friends house to pick up some goodies (shrimp and Sangria fixings).  While we were there, I grabbed a Luna Bar.  I was starving and needed something to fill me up.

By far, my favorite flavor.

We made a delicious Red Wine Sangria

Here is my recipe for Red Wine Sangria

Ingredients

  • 1 bottle of red wine (I like to use merlot or zin)
  • 1 bottle of ginger ale (I use diet, you can also use club soda or sprite)
  • 2 red apples, sliced
  • 2 green apples , sliced
  • 1/2 cup grapes
  • 1 peach, sliced (optional)
  • 1 lemon, cut in half, slice one half
  • 1 orange, cut in half, slice on half
  • 1 cup blackberries
  • 2 shots of brandy

In a large pitcher pour in the red wine and 2 shots of brandy.  Squeeze in half the lemon and orange.  Next, add the apples, grapes, peaches, blackberries, lemons and oranges.  Place in the fridge for 30 minutes to chill the wine and soak the fruit.  When you are ready to drink the Sangria, pour in the ginger ale.  I like to use almost equal parts ginger ale and wine.  You can add as little or as much as you like.  Serve and enjoy!

After a day of football, I was worn out and ended up going to bed by 8pm!  Yes, 8pm!  I woke up at 4am ready for the day!  

On the agenda for today- finish the laundry (I don’t know how but somehow we acquired even more), yoga, Costco, mop the floors, head to the bank , finish all the wedding thank you notes and also stop by one of our gyms to clean!  We are so excited for the football game tonight.  Our Vikings play the Jets!

  Now onto Morning Meditation!

Motivation for Today:  Vikings game!  That means I need to be positive and get thru my to do list today so I can enjoy the game and not think of other things I should be doing

3 Things I am Thankful for Today:  1-Vikings play tonight 2- There will be no more laundry to do in a few hours 3- Sunny blue skies!

Goal for the Day:  Make sure I don’t put yoga off, my body needs to stretch
