Happy Hump Day and Thanksgiving Planning

3 Nov

Hey guys!  As you have probably noticed I’ haven’t been posting as much lately as I normally do.  All that will return to normal Thanksgiving week!  : )  There has been so much to do lately and only enough time in the day to sneak in one quick post.  I really appreciate everyone who reads this blog and takes time to comment on my posts.

Okay, so Thanksgiving is fast approaching and I am in need on some good holiday recipes.  This year it will be just Keith and I and we are planning on cooking a small Thanksgiving dinner by ourselves.  This has never happened before.  Last year, we went out to dinner and all the years prior, we had family who made us delicious and outstanding Thanksgiving meals (Thanks Mom and Ann)!  If you have any recommendations I would greatly appreciate recipes of your favorite Thanksgiving dishes!  You can post them in a reply or email me at TrainerKjirrsten@aol.com.  We get back to AZ the week of Thanksgiving, so I figured I better start planning early!  : )

Onto other things, today’s workout was 60 minutes of cardio.  I did the elliptical for 30 minutes, walked on an incline on the tread for 15 and did the stair climber for 15.  Only 3 early morning workouts left before bikini time!  If that doesn’t keep someone motivated, I don’t know what would!!!  : )

My eats from yesterday were:

  • AM Snack- Organic gala apple + a handful of raw almonds and walnuts
  • Lunch-  Chocolate whey protein shake
  • PM Snack-  Huge scoop of PB
  • Dinner-  Apple Gorgonzola Salad minus the apple with chicken breast and very little cheese

This morning I had hot lemon water, a cup of black coffee and a piece of Low Sodium Ezekiel Bread with peanut butter!

Morning Meditation

Motivation for the Day:  Feeling amazing!  I want to always nourish my body with the proper foods to fuel me throughout my day and give my body the proper foods to propel me throughout my workouts!

Three Things I am Thankful for Today:  1-  Online Shopping with overnight and 2 day delivery!  2-  My ability to multitask  3-  Our new “child” that is going to be born in about 10 days!  : )

More on the Aussie pup to come!  : )

Goals for the Day:  Continue to get as much done today as I possibly can, before the craziness of the weekend begins!

Motivation Quote of the Day:  Inspiration is that state in which mind and heart are connected.  – Deepak Chopra

Besides oatmeal, what is your all time favorite breakfast?  Does anyone have an Aussie for a pet or been around one before?  If so what do you think of them?

Update:  About an hour after I posted this I got an email from ACE (American Council on Exercise) about healthy Thanksgiving eats!  Click Here to enjoy the article along with some recipes.  I’m still interested in hearing what you recommend.

I probably would end up just making sweet potato casserole and green bean casserole and calling that dinner if it was just Peter & I. Those are by far my two favorite dishes on Thanksgiving.

My boyfriend’s dog is having puppies soon and I’m so excited! Your post reminded me:)
I love omelettes, or french toast on a special day.

Oooo so many great things to make..

YOu can roast root vegetables (celery root, parsnips, turnips, beets) for two people and add some thyme and sage to the mix (and olive oil!). Then add chevre cheese in the last 5-10 minutes on top of the roasted roots.

Also, a 8 lb turkey would be great and keep leftovers for a good week or so

My favorite all time breakfast, if I didn’t care about what I was eating, would be a GIGANTIC bowl of apple cinnamon cheerios and a piece of chocolate cake 🙂 HOW HEALTHY! haha! Thanks for emailing me back today…it was very helpful, I appreciate it!!

I don’t think I’d be much help for Thanksgiving recipes, since we always go to my parents and my Dad does ALL of the delicious cooking!!!

This year I’ll be making a few vegetarian dishes though, so if I come across anything good I’ll let you know.

3 days is great motivation! 🙂
