Christmas Time is Here

29 Nov

The Husband and I have been working hard to decorate the house for the holidays and we finished yesterday (Sunday)!  What a relief!  What fun too!  I love getting all of our decorations out of the garage and turning our house into a winter wonderland!

On Saturday, we used the leftover turkey and vegetables to make a crock pot creation.  We added garlic, frozen vegetables I had in the freezer (celery and onion),  pepper, a tiny bit of sea salt, brown rice and chicken broth to the mix and let that baby cook all day.  By dinner time, the rice had cooked perfectly and dinner was served!  I am all for easy dinner recipes especially when they are healthy and use up leftover food we already have on hand.

I used 2 recipes to create my own!

The crock pot creation was great, we had it on Saturday for dinner and we are having it again for dinner tonight.  I’m not sure if we will have anything with it, maybe a lettuce salad if anything.  It is a hearty meal by itself!

Saturday, we bought a Christmas tree for our house and spent the remainder of the night watching 4 Christmases and putting lights on the tree.

The Husband sawing off the bottom of the tree- the poor guy, it took forever and our saw was way to small.

Once the tree was ready, we took a break to pour a glass of red wine.

After relaxing for a minute, it was ti me to bring in the tree

Colored lights for the family room tree!  This is as far as we got on Saturday.

When we woke up on Sunday, it was snowing!  It was so great!  It felt like we were back in Minnesota!

We made coffee in our Christmas mugs and got to work on the tree!

I take decorating a tree very seriously, look at the concentration!  And yes, I am wearing a Brett Favre Vikings jersey!  : )

After the “big” tree was done, we had to decorate the little trees in our entry way!

Today (Monday), was spent at working trying to still play catch up from vacation.  I can’t believe how quick the day went!  Like I mentioned before we are having leftover crock pot creation for dinner and I think keeping our evening pretty low key.  My workouts haven’t been the best since Mexico, and I can’t wait to start training for the Sedona 1/2 marathon tomorrow!  I created a new workout plan that I can’t wait to share with you guys!  I will post it tomorrow!  I still have a few pounds to lose of “Mexico weight” but plan on staying in tip top shape throughout the Holidays!

Have you decorated your home yet?  What is your favorite part of the Holidays?  Do you have any favorite crock pot recipes you like to make?
