No, not that stuff…..who do you think I am? I am talking about this white stuff…snow! : ) Cheesy joke I know, but I couldn’t resist!
Living in Arizona, we don’t get much snow. In fact, we hardly get any at all. Last year we were lucky enough to enjoy plenty of snow all December long while vacationing and visiting family!
Before we left on a Holiday trip to see our parents, we woke to up to SNOW one morning on the back patio! We were so thrilled (and yes, that is a giant tumbleweed lodged between the chairs).
A few days later we left for Bozeman, Montana to visit Keith’s parents and there was lots and lots of snow!
From Bozeman, Montana we flew to Minneapolis, Minnesota to visit my parents. There was lots of snow there as well.
Right now it is 65 and sunny out and I wish it were snowing and 10 degrees out! I can’t complain but I am really missing snow today!
On to other things. Breakfast was PB toast and a cup of coffee.
AM Snack was a protein bar and a few almonds
Lunch was Easy and Quick Basic Asian Chicken Salad
- Organic Spring Mix
- Organic Cabbage (1/2 head)
- Organic Cilantro- fresh
- Raw Almonds
- Amy’s Gingerly Salad Dressing or your favorite Asian dressing
- Organic Chicken Breast (optional)
Other things to add to your salad to make it even more fabulous: bean sprouts, black sesame seeds, sliced red onion, cashews, red peppers, cucumbers and shredded carrots.
Place a handful of the spring mix on a plate
Wash the cabbage and cut it into thin little strips (you can use pre shredded bagged cabbage if you want. I prefer fresh so it doesn’t lose any of its nutrients).
Fresh cut vegetables make me very happy! : )

Next, you need to roast the almonds. I like my almonds slivered best, but didn’t have any on hand so I chopped them before roasted them

I cheat and put my almonds over the stove, once I start smelling them even in the faintest, I take them off the stove and they are good to go
Add them to the salad
While the almonds are roasting, I washed the cilantro
Next, add the chicken (optional, we had it on our today) and cilantro to the lettuce and cabbage
Top with your favorite Asian dressing and enjoy!
I’m not sure what we are going to have for dinner. Ever since Maren posted on pizza earlier today, I have been craving it, but who knows! I’m off to run errands with the husband!
