Back at it

Is it only Tuesday?  Wow.  It should be Friday in my book.  Since it is the new year, we have been SWAMPED with work.  So much so, I haven’t really had a life outside of work and the puppy.  I haven’t worked out in days, I haven’t blogged in days, I have been throwing together dinner quickly and the laundry is piling up. 

Today, I’m taking back my life.  Making more time for “me time” in my busy hectic week.  I’m on my second load of laundry, already have my workout clothes laid out for an early morning workout (even if I’m exhausted) and I even went to the grocery store after work and didn’t feel guilty leaving the puppy at home for an extra 20 minutes.  We really needed lettuce and spinach and were totally out.  Last night was going to be salad for dinner, but since our brand spankin’ new spring mix from Costco was wet and gross (we hadn’t even opened it), I threw together some pasta.  So tonight, I was on a mission to get my great big green salad!  My body was happy!  I feel great, the puppy is busy playing with his water bottle and the Husband has a full belly. 

Here are the eats from Monday:

  • Breakfast- PB toast with 1/2 cup coffee
  • AM Snack- Walnuts with 1 Hershey’s chocolate
  • Lunch- Boca Burger on an Ezekiel pita with a slice of organic American cheese, mustard and ketchup
  • Pm Snack- Whey protein shake mixed with water
  • Dinner- Whole wheat pasta with Chicken, loads of spinach, yellow onion garlic and tomato sauce.  Delish!

Tuesday Eats:

  • Breakfast- PB toast with 1/2 cup coffee
  • AM Snack- Whey protein shake mixed with water
  • Lunch- Boca Burger on an Ezekiel pita with a slice of organic American cheese, mustard and ketchup
  • Pm Snack- Pecan Pie Lara Bar
  • Dinner- Leftover pasta with a monster salad

Lunch the past two days- Boca on an Ezekiel pita.  Looks gross, taste good!


Yummy salad.  My body was craving greens!  Also on the salad, gorgonzola, red onion and walnuts!


Whole Wheat Pasta with Spinach, Chicken and Onion


  • Whole wheat pasta 4-6 servings
  • Organic Chopped Cooked Chicken Breast
  • 6-8 Cups Spinach
  • 1 Jar Pasta Sauce
  • 1 Large Diced Yellow Onion
  • 2-4 TBSP minced Garlic
  • 2-4 TBSP Crushed Red Peppers
  • Salt and Pepper to taste
  • Mushrooms (we didn’t have any, but I would love them in here)

Directions:  Cook pasta according to package directions.  Sauté onion and cooked chicken in a pan along with the garlic and crushed red peppers.  Once cooked, add in your spinach and top with pasta sauce once the spinach has wilted.  Let simmer for 10 minutes or until the pasta is cooked and drained.  Add in the pasta and coat it with the pasta sauce.  Serve and enjoy!







This was an amazing pasta dish.  Like I mentioned in the ingredients, I would add in mushrooms to hide even more vegetables in the sauce.  Both the Husband and I give this pasta recipe two thumbs up!

Well, that’s it for now!  Tomorrow is the Wednesday Workout of the Week!  Since I took back my life today, I’m going to hang with the Husband and Quincy and watch the rest of the Biggest Loser!  I always get so motivated by this show!  Love it!
