Lunch and Crazy Quincy

For lunch, I made a chicken Boca patty.  I had it on an Ezekiel pita with vegan mayo, organic lettuce and organic tomato!  It was delish and totally hit the spot! 

Today was the first time I tried this Spectrum Eggless vegan Mayo and I give it two thumbs up!  Great flavor!

Question:  I have a block of tofu in the fridge that needs to be eaten, what is your favorite go to tofu recipe?  I can’t decide what to make with it!



Chinese Food

Dinner last night was Chinese.  Tonight will be a salad to keep our meals balanced.  : ) We also watched Inception.  I loved that movie!  A little hard to follow at times, but if you haven’t seen it, I highly recommend it!

Breakfast this morning was Low Sodium Ezekiel Toast with organic PB. 

Protein + Fiber = Filling Breakfast


I’ve had a few people ask how my PB is so creamy and I thought I’d share what kind we buy.  We like buying Kirkland (Costco Brand) Organic Peanut Butter.  It comes in a two pack.  I’ve been know to be a PB snob and I LOVE this one!

I’ve got to run home to let the puppy out and eat lunch, but will be back later with lunch eats and I’ll be posting my 2 new strength workouts I’ll be doing on days 2 and 5 of my new fitness plan!
