Hey everyone!

How was your weekend?  Mine was great!  They always go to fast though.  This weekend, the Husband and I went a first birthday party (our first) and made a kick butt dinner last night.  I didn’t get any pics, since my memory card was full, but I will still provide the recipe below and add in some pics the next time we make it (soon)!

Yesterday my workout was strength- pecs and intervals.  It was a great workout and felt really good to be lifting with the Husband on a Sunday morning.  For dinner we made a healthy Chicken Parmesan

Wow.  That’s all I can say!  It was amazing!

Yesterday’s Eats

  • Breakfast- Hot Lemon Water, 1 Slice Ezekiel Toast with 2 Eggs, 1/2 cup Coffee
  • Lunch-  Whey Protein Shake mixed with Water
  • PM Snack-  1 tbsp Peanut Butter and Celery with Hummus
  • Dinner- Chicken Parmesan

Quick and Easy Chicken Parmesan with Mushrooms

It looked something like the picture above, but not breaded.


  • 1 lbs chicken breast (we used pre sliced natural chicken breast)
  • 1 jar of your favorite pasta sauce (we used herb)
  • 1/2 – 1 cup shredded parmesan
  • 1-2 cups sliced baby Bella mushrooms
  • 2-3 servings of cooked whole wheat pasta, your favorite kind

Preheat the oven to 375 degrees.  In a small baking dish, cover the bottom with pasta sauce (about 1 cup), next place the chicken on the pasta sauce, cover the chicken with the cut baby bellas, pour the remaining past sauce over the mushrooms.  Next, sprinkle the parmesan over the top of the dish.  Cover and back for 20 minutes.  Remove foil and cook for an additional 15 minutes.  Let sit five minutes to cool. 

Serve with whole wheat pasta.  A green salad would make a great accompaniment. 

Onto today.  The husband and I had a great workout in the gym bright dark and early this morning.  We ran intervals for 20 minutes and then lifted legs together.  Man, by the time we were done, my legs felt SO heavy!  We worked out for about 50 minutes and I burned about 450 calories.  I’ve been using my Polar Heart Rate monitor again.  I forgot how much I love that thing.  BTW, my pecs are SO sore right now.  As are my triceps and my upper back.  I love being sore, it makes me feel like I accomplished something. 

Below are my eats for the day:

  • Breakfast (7:30am)- Hot Lemon Water, PB toast on Low Sodium Ezekiel Bread with 1/2 cup coffee
  • AM Snack (10:30am)- Small Organic Pink Lady Apple with a few Walnuts (they tasted like red onion for some reason)
  • Lunch #1 (12:00pm)-  1 Ezekiel Pita with Hummus
  • Lunch #2 (1:30pm)- 1 Whey Protein Shake mixed with Water
  • PM Snack- Flaxseed and Chia Seed drink mixed with Cranberry Water
  • Dinner-  Apple Gorgonzola Salad with Chicken and Homemade Dressing (olive oil, balsamic, lemon juice and garlic powder)



Since I haven’t been posting as consistently as I would like, here are a few pictures of Quincy from tonight.  He was waiting for his dinner so I snapped a couple quick pics.  He is now over 30lbs.  Where did my little fur ball go?  It is amazing how quickly they grow!

    That chicken parm sounds amazing!! And so easy, too! I will definitely have to recreate it.

    Fun things done today… chatted with my Kindergarten students about their weekends, helped them paint fingerprint rainbows for our St. Patty’s Day bulletin board, surfed the web, great workout. 🙂

    Last night, my girlfriends and I got together and had our weekly connect group–as we go through the book “Crazy Love.” We chatted, ate cookies and laughed. 🙂
