So my weekend has been taken up by basketball, basketball and more basketball. Every year when the tourney comes around, we take every advantage of it and have as much fun as we can! : ) Normally, the Husband and I bet and also the Husband plays in a fantasy league and we both cheer on his teams. Well, this year, I am in the fantasy bracket as well, so between our bet together and our fantasy league, we have been watching almost every game. Last night I was cheering on Butler (one of my fantasy teams) even though I thought Pittsburg would slaughter them! OMG, what am amazing game! Butler beat out Pitts, the number one seed team to make it into the Sweet Sixteen! If your not familiar with the tourney, this probably sounds like mumble jumble to you and I’m sorry! In the last seconds of the game, Butler made a basket to come ahead by two points. I started celebrating and jumping up and down not believing they were moving on. Then, Butler fouled and sent Pitts to shoot free throws with only a second left. They made the shots to tie the game! Overtime. Wait, not so, Pitts, fouled Butler with a nanosecond left and sent Butler to shoot free throws. They made the first shot to win the game! It was amazing and intense all rolled into one! So much fun to watch! Today, I cheer on my college Jayhawks (Kansas) and I can’t wait! : )
Fun Fact: I made an ESPN bracket for fun, that is the same as the one I did with the Husband. Right now I’m ranked 2,932,385 (ouch) while President Obama is ranked 11,264 out of nine million! He’s doing pretty good! I should have taken some advise from his bracket!
Okay, enough about basketball and onto to yesterday’s eats!
- Breakfast- Blueberry, Banana, Peach Smoothie with Almond Milk and Vanilla Protein Powder….nom nom nom
- Lunch- Apple and Gorgonzola Salad
Natural Organic Chicken free of Hormones. Protein takes longer for the body to digest which in turns keeps you fuller longer! : ) I cooked the chicken in water and coconut oil and seasoned it with pepper and a pinch of sea salt.
Spring Mix, Granny Smith Apple, Gorgonzola, Walnuts, Chicken, Red Onion all topped with Annie’s Balsamic Dressing. Healthy Balanced Lunch!
- Snackage during the Games- Chips and Salsa, I probably had a total of 8 chips with salsa over the course of the afternoon.
- Dinner- Philly Cheese Chicken Sandwiches
- Sliced Chicken Breast (1/2 lb or 2 chicken breasts sliced)
- 2 Small Yellow Onions
- 2 Small Green Bell Peppers
- 2 Cups Sliced Mushrooms
- Black Pepper, Garlic Powder and Crushed Red Peppers
- 2 Buns, Hoagies or 4 Sliced of Bread
- Sliced Cheese- We used Pepper Jack and Sharp Cheddar
Sauté yellow onion and green peppers until they start to become soft. Add in chicken breast and mushrooms. Cook until chicken is no longer pink inside and vegetables are soft. Season with fresh pepper, garlic powder and crushed red peppers.
Place the slices of cheese of the bun and broil in the oven until the cheese has started to melt.
Place the buns on a plate and place the vegetable and chicken combo on the bun. Serve and enjoy!
Yesterday’s Workout- 20 minutes of treadmill intervals followed by 10 minutes of incline walking. After that, I lifted my pecs and also worked on my core. I’m already so sore today! Successful workout!
