Back and Ready to Rock!

Hey guys!  Wow, where does time go?

Keith and I got back from Bozeman, Montana a couple days ago and we had SO MUCH FUN!  I’ll save the details for another post, there’s lots to share!  : )

We got home on Saturday and since then we have been playing catch up- unpacking, cleaning the house, loads and loads of laundry, getting caught up on work, catching up on the details of the Royal Wedding (since we spent last Friday driving for 12 hours and missed it all), starting a real estate class (a gym member is teaching it and thought we should take it) and getting back on our workouts (I wont lie, we plan to start tomorrow) and healthy eating.

Speaking of healthy eating, here are my EATS from the day.  I need to eat super healthy this week and lose my vacation lbs I packed on!   : )

  • Breakfast-  Eggs, Cheese and Salsa on a Tortilla
  • AM Snack-  Organic Pink Lady Apple
  • Lunch- Ezekiel Tortilla with PB and Banana

  • PM Snack- Pirates Booty (about 1 cup)

  • Dinner- Homemade White Chicken Chili Soup and Salad

Salad consisted of spring mix, shredded carrots, celery, tomato, green bell pepper and a sprinkle of gorgonzola.  We used Huckleberry dressing that I bought in Bozeman and it was simply delicious!

Homemade White Chicken Chili– Adapted from Keith’s Mom’s recipe

Ingredients

  • 1 1/2 Cooked Chopped Chicken Breast
  • 2 Boxes Chicken Stock
  • 2 Boxes Cream of Mushroom Condensed Soup
  • 1 Packet Taco Seasoning
  • Spices- Salt, Pepper and Crushed Red Peppers
  • 3 Cans Northern Bean (or any type you want)
  • Minced Garlic (we used 1 clove)
  • Chopped Yellow Onion (we used 2-3 small/medium)

Place all the ingredients in a Crockpot and let cook for 4 hours or until all the flavors have combined.  Serve with a sprinkle of pepper jack cheese and tortilla chips!  :  )

It is a really easy recipe and tasted delicious!  We made it on Saturday and have eaten it ever since.  We finished it up tonight.  I don’t have exact measurements for everything, but you can tweak the soup as you go.  We wouldn’t normally make such a big batch, but we knew we were going to be super busy at the beginning of the week and made extra for quick easy meals! 

I plan on getting back on the Exercise Routine tomorrow and can’t wait for a good sweat!  Here is what my current exercise plan consists of:

  • Chest and Intervals
  • Legs and Intervals
  • Tricpes and Back
  • Biceps and Shoulders
  • Long Cardio
  • Long Cardio

Other things I do each week are yoga, pilates, core work and every night I do 3 sets of minimum 15 push ups (usually during commercials while I catch up on reality TV).  We also take the little pooch for a walk daily (about 2 miles) and we recently joined a softball league that starts next week (eek)  <—I’m not a fan of softball or baseball, but it will be fun to spend Wednesday night with some friends outdoors!

    the crockpot dinner looks delicious…definitely making this!!!

    i played softball for 1 season in like 3rd grade and SUCKEd haha. but i wish i was playing some sort of pickup game sport with friends…great way to socialize and stay active too

    I have a love/hate relationship with coming back from vacations. I hate all the work in getting things reorganized and settled, but part of me always feels good and happy to go back to normal life. Hope things continue to go smoothly for ya!

    Welcome back. I hate coming back due to real world issues to put up with. I have never had huckleberry anything but I really want to try it.

    Welcome back! We have giant, wild huckleberry bushes at my parents house, and you could do all kinds of wonderful things with them. Yum!

    I make a white bean chili recipe that it’s almost identical, & love it. YUM!

    Welcome back!! I always love coming back home and getting back into my routine but miss all the fun part of being on a vacation and the stress less days!!
