Hey guys!  Did you all have a wonderful Cinco De Mayo and eat lots of Mexican food followed by downing margaritas?  If you did, good for you!  : )  We kept it simple and threw together some chicken fajitas at the last moment in honor of the special occasion.  We skipped the margaritas though, but will probably have one tomorrow as a late celebration!

Here are my EATS from yesterday (Thursday):

  • Breakfast-  Ezekiel Low Sodium Toast with Peanut Butter, 1/2 Banana and 1/2 cup Coffee
  • Am Snack-  Pink Lady Apple and Walnuts
  • Lunch-  Salad Wrap with Huckleberry Dressing on an Ezekiel Tortilla
  • PM Snack-  Blueberry Chobani
  • Dinner-  Chips and Salsa (while making the fajitas) and 1 1/2 Chicken Fajitas  <—They were out of this world delicious and so quick and easy to make!

When I finally stepped on the scale this morning, my vacation pounds had all melted away!  Yay!  I’m now back to my pre-holiday weight.  I would like to lose 2 pounds to get in great summer shape and 3 more after that to get in STELLAR summer shape!  I’m not going to do anything different to lose the weight, but incorporating workouts back into my schedule (we were lazy over vacation, I will admit it!) should be all that I need to do.  I tend to eat lighter in warmer weather so I expect to be at the 2lb loss in the next week or two.  I’m in no hurry.  Once I’m there I’ll decide if I want to lose another few to look and feel even better in my summer shorts!  : )

On another note, we started our Real Estate Class yesterday.  We had a lot of fun and we are already learning lots of new things.  I’m not sure what we are going to do with our licenses once we have them, but it would be nice to make a little extra money on the side from what we already make with our gyms.  Summer months at the gym tend to be a little slower, so we decided to take this class and see where it goes!  Plus, we LOVE looking at homes and would love to get that lock box key and start checking out awesome homes when we are bored.  A few weeks ago, we put an offer on a home, but lost to another offer that was a full cash and above the asking price.  We were looking for a deal and didn’t end up getting it!  So it will be nice to see homes before they go on the market…in case we want to snatch them up…ha!  We still have 87 hours to go and should except to add realtor to our resume sometime in July!  I would have never expected to be a realtor in all my life, but hey, life brings you on weird adventures!  : )  Plus, if we can make some extra play money I’m all for it!  : )

That is about it for now!  We have a busy weekend planned.  Nothing going on today except running with the dog and then giving him a dreaded bath.  Tomorrow we are meeting friends to go to a festival and then meeting other friends for dinner.  Sunday we have softball practice.  I’m a little nervous to go in the grassy fields since the snakes are out in full force (we saw our first road kill snake a few days ago).  YUCK!  If I see even one, that is the end of my softball career in 2011…maybe it would be a good thing?

I nearly had a heart attack when I saw this thing in our backyard last summer…I’m still hesitant to go out there once I know the snakes are out, which makes bringing Quincy out hard!  Don’t let the pic fool you, this guy was at least 5 feet!  We saw him a few days later outside our front door!

    My body actually fluctuates by about 10 pounds summer to winter. It could be inseason for swimming and running versus off but I think it is being in northern NY you need your insulation. I’m glad your vacay weight has melted off!

    I hate snacks. My dad killed one once with a hammer. Oh. My. God.

    Snakes totally freak me out!

    I do tend to drop a few pounds in the summer. Mostly because it’s much easier to be active in the northwest during the summer months. 🙂

    I’m not scared of snakes unless they are slithering over me or is big-ass like a boa. I don’t really weigh myself regularly, so I can’t tell if I’ve dropped pounds before over the summer. I don’t think anyone notices a few pounds much, so I’d rather not get caught up by the numbers. 🙂

    YIKES, we had a snake in our backyard yesterday…sooo creepy! Yes, I wanna lose some weight and get ready for swimsuit season, especially since I know my kiddos are going to wanna live at the pools! I’m in the zone, so we’ll see if it pays off!!
