After a busy week, I’m so happy it is the weekend! We started off Friday night by making Caesar salads for dinner followed by watching Harry Potter: The Goblet of Fire. It was great! Although I dreamt all night I was in the movie trying to battle dragons as Lady Gaga’s song On the Edge of Glory was my background music in my dream. Strange. It really was.
We don’t have much planned this weekend, not by choice but because of the puppy. He got sick on Tuesday, we took him to the vet Thursday and are now waiting for his meds to work and cure him 100%. So, due to Q, we are having a nice relaxing weekend!
Lets get onto business. I want to share our great Caesar Salad recipe with you all!
Awesome Chicken Cesar Salad
This is a great summer salad to eat for lunch or dinner. It is light and fresh, low in calories and provides the body with plenty of protein and nutrients. Plus it wont weigh you down! I know I tend to eat light foods in summer and more heavy foods on cold winter days!
- 2 Chicken Breasts marinated in Neely’s Chicken Marinade (found below)
- 2 Slices Natural, No Nitrites or No Nitrates, Uncured Bacon Crumbled
- 1 Large Firm Tomato
- 1 1/2 Bunches Washed, Dried and Chopped Romaine Lettuce
- 1/4 – 1/2 cup Shredded Parmesan Cheese
- Cesar Salad Dressing (either homemade or your favorite store bought brand. We used Brianna’s Asiago Caesar Dressing. Hands down best Caesar dressing I’ve come across)
Grill marinated chicken breast until fully cooked. While the chicken is grilling, cook 2 slices of bacon and crumble once cooled, chop the tomato, and prep the lettuce if you haven’t already done so in advance. In a large salad bowl, toss the lettuce, tomato, crumbled bacon and parmesan cheese. Set aside. Once the grilled chicken is cooked, let cool for 5 minutes before slicing it. Slice the chicken and add it to the salad. Toss the salad one last time are serve. Dress with Brianna’s Asiago Caesar Dressing (since the salad has so much flavor on its own, you will hardly need any salad dressing. This is why we dress the salad individually to our likings. I used maybe 1 tbsp max on my large salad).
Adam and Noel Neely’s Chicken Marinade
This marinade is perfect for lots of different recipes. We first had it at their house last weekend with chicken tacos they cooked up. We loved the chicken so much, we asked for the marinade recipe. Let me tell you, this marinade is as good with Awesome Chicken Caesar Salad as it was on chicken tacos! I think it works for many recipes!
- 1/2 Stick of Butter (We used 1 small stick of Earth Balance)
- 2 tbsp Soy Sauce
- 2 tbsp Worchester
- 1/4 cup Lime Juice
- 1/4 Cup Lemon Juice
- 1 Pinch of both Garlic and Sea salt (or garlic salt if you have it on hand)
Combine all ingredients in a sauce pan on the stove until the butter has melted. Wisk together until you have an even consistency. Pour over your favorite meat and refrigerate for 3 hours. Cook and enjoy!
*More tips and suggestions- We only marinated our chicken for about and hour and a half. Our hunger took over! : ) I also seasoned our chicken breast with a little sea salt and garlic powder on once side before pouring the marinade over it. I also used a Pyrex pan to hold the chicken and marinade not a plastic bag since the mixture is warm when you pour it over the chicken and if you use a plastic bag, you run the risk of the plastic breaking down. We also marinated 4 chicken breasts with this recipe so we could have two already to eat today.
We served our salads with 2 slices of fresh baked baguette we picked up at our local organic store! Next time I might rub them with garlic and cook them on the grill for just a minute! Yum!
Such a simple, easy classic summer meal!
This is the salad dressing we used. I found it at our local organic store as well, but know I’ve seen this brand in many grocery stores before. The calories are quite high, but like I mentioned above, you barely need any to dress this salad since it has so much flavor on its own! You can actually see how much we used from the new bottle on two huge colossal salads- hardly any.

- Am Snack- Flaxseed and Chia Seed Drink Mixed with Cran Water

- PM Snack- Handful of BBQ Chips
- Dinner- Awesome Chicken Caesar Salad with Baguette
Workouts- Yesterday I ran a few miles then lifted the crap out of my triceps and back. I’m already SO SORE this morning! Oh, and we also walked about 1 1/2 miles later in the day because Keith didn’t put gas in his car and we ran out of gas for the first time ever. I was a little pissed at him since I wasn’t wearing shoes fit for walking hills in, but at least we burned an extra 150-200 calories! : ) Today, Keith and I plan on doing 20-30 minutes of cardio followed by lifting our biceps and shoulders!
