Italian Meatballs and Weekend / Workout Recaps

This past week I was able to drag my butt into the gym five times.  Here are my workout stats.

Monday August 8th, Cardio

  • Time:  46:18 minutes
  • Calories:  408 Calories  30% fat
  • Max Heart Rate:  178bpm 93% max
  • Average Heart Rate:  163bpm  85% max

Wednesday August 10th, Strength

  • Time:  52:26 minutes
  • Calories:  339 Calories  50% fat
  • Max Heart Rate:  181bpm 94% max
  • Average Heart Rate:  136bpm  71% max

Not included in Wednesday’s stats was a 30 minute prenatal yoga DVD.

Thursday August 11th, Cardio

  • Time:  47:46 minutes
  • Calories:  363 Calories  40% fat
  • Max Heart Rate:  177bpm  92% max
  • Average Heart Rate:  149bpm  78%

Saturday August 13th, Strength

  • Time:  47:49 minutes
  • Calories:  230 Calories  55% Fat  (I was move slow this day)
  • Max Heart Rate:  167bpm  87% max
  • Average Heart Rate:  117bpm  61% max

Sunday August 14th, Cardio

  • Time:  52:13 Minutes
  • Calories:  419 Calories  40% fat
  • Max Heart Rate:  178bpm  93% max
  • Average Heart Rate:  154bpm  80% max

Not included in Sunday’s stats was a quick 15 minute prenatal yoga DVD.

Today, Monday, was a rest day from the gym.  It felt so good to sleep a little longer!  I plan on doing the 45 minute prenatal yoga DVD this afternoon once I get home from work.  I love how much this prenatal DVD opens up my hips and really stretches out my tight leg muscles.  It is my goal to practice as much yoga as I can before giving birth.  Studies show woman who do prenatal yoga have an easier birth!  That is reason enough, even if I only practice the quick 15 minute DVD.  What I like about the sessions are after you complete the 15, 30, 45 or 75 minute practice, the instructor guides you through a calming meditation.  It takes about 5 minutes and then you can lay and meditate and focus of relaxing and your breath for as much longer as you need!  This is my favorite part of the DVD!  : )

Onto the weekend recap. 

Friday, Keith and I went out to lunch and each got a side salad and split macaroni and cheese.  It was delish!  I was actually so full still from lunch that I ended up eating a piece of corn on the cob for dinner and nothing else.

Saturday, We got up early and took Quincy to the park by 6:30am.  I worked practically all day after that running errands and cleaning the house.  I didn’t even get showered up until about 5pm.  I was exhausted and we ended up getting a pizza from Papa Murphy’s and watching Rio (a great and cute movie).

Sunday,  We worked and ran errands until about 1pm.  Once home, I showered, did a quick yoga session and then we got to making homemade Italian meatballs in marinara sauce.  We use lean turkey breast and lean local grass fed beef that we get at our local organic store.  They turned out perfecto and I can’t wait to eat them for dinner tonight!  I think I ate my weight in them yesterday!  : )

Italian Meatballs

*Warning, raw meat is shown below in the recipe so please skip over if you are squeamish about seeing raw meat.

Ingredients (we tripled the recipe)

  • 1lb of lean grass fed beef / lean turkey breast or a combo of both
  • 1 egg
  • 1/4 cup milk
  • 1/2 cup breadcrumbs
  • 1 jar of your favorite marinara sauce
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Oregano
  • 1tbsp Parsley
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Crushed Red Peppers (optional)

Combine all ingredients into a bowl.  Mix together with your hands until all ingredients are evenly blended together.  Form meatballs in your hands so each one is about 1 inch around or to your liking.  Once all the meatballs are formed, heat a skillet with 1tsbp oil on the bottom and place all the meatballs in the pan.  Cook the meatballs for a couple minutes on each side or until they are browned evenly (they will not be fully cooked).  Next, add the jar of pasta sauce to the Crockpot, on high, and add in the meatballs to finish cooking.  They will take anywhere from 2-4 hours on high to finish cooking.  Always test them before eating or serving to make sure they are fully cooked.  Serve with a green salad / crust bread or over your favorite pasta!  They make a great appetizer and go quickly so make sure you make a big batch!  Enjoy!

    Your recipe looks delicious! One of my very most favorite meals that my mom makes is her lasagna with homemade meatballs. It’s a traditional plate from where we’re from in Italy and I look forward to having it at Christmas each year! It’s SO good!

    Girl, I was in a coma early in my pregnancy…look at your workouts! Wow!!! I didn’t get my energy back until about 15 or 16 weeks!
