Weekend Recap & Anniversary Dinner

This weekend was a whirlwind of fun and work.  It went by way too fast.  I’m looking forward to the three day weekend next week for Labor Day (yay)!  I have so many odds and ends to take care of around the house and am excited to start tackling some of them. 

My prenatal massage was heavenly on Saturday and I can’t wait to book another one.  It felt amazing after a tough morning strength training session to have my muscles worked on.  They tried having me lay stomach down in the pregnancy cushion on the bed, but since I’m not showing yet (unless its right before bed), I got to lay on the regular massage bed.  For a girl who already feels like a whale has invaded my stomach, this felt great!  : )  I also took it as a compliment when they masseuse couldn’t believe I was already 17 weeks!  As much as I’m looking forward to the massive baby bump, I’m still fine without showing greatly at this point!

Sunday was so busy.  We headed to Starbucks as soon as we woke up (6:15am) and got some java.  Once home, we decided we should head out to all the gyms and make sure they looked good since we didn’t stop by them on Saturday.  This took a little while.  Once we were done with the gyms, we went out to breakfast at Hotel St Michael.  We practically rolled out of the restaurant.  Afterwards, we headed up to Target, Michaels, Pet Smart and Costco to round out our errands. 

During out errand outing, I started feeling guilty that Quincy was basically locked up from 6am until noon.  I decided against going to Sedona and locking him up again for another 5 or so hours.  It was also storming out and Sedona was going to be over 1oo degrees.  Heat and this pregnant girl don’t get along.  We decided we rather go to Sedona or Jerome when they weather isn’t so hot and stormy!  Since we weren’t going on any first anniversary adventures, we decided to finally order our wedding pictures (we pick them up today).  I can’t wait to frame them and hang them in our house!  We also planned out a great first anniversary dinner.  It had to be special.  Here was the menu:

  • Green Salad with Red Bell Pepper, Red Onion, Tomato, Cucumber & (optional) Feta, Cranberries, Raw Walnuts
  • Grilled Asparagus
  • Homemade Garlic Mashed Potatoes
  • Asparagus and Gruyere Ravioli tossed in Olive Oil
  • Grilled Salmon
  • Italian Cream Cake
  • Wine for Keith
  • Cranberry Blueberry Mocktail for Me

OMG, this meal was so tasty.  I could hardly finish my plate of food and we had to wait a couple hours after dinner to sample the cake.  If you live in Prescott and shop at New Frontiers Organic Grocery, you must try their Italian Cream Cake.  It had nuts and coconut.  It was delicious and super light.  Plus the ingredients list was super short with all whole natural foods.  Love it!

Garlic for Roasting


I caved and put out some fall decor despite the 95 degree weather that won’t go away!


Potatoes and Asparagus.  Does anyone else get excited looking at fresh vegetables?  They always put me in the best mood.  Weird I know.


More fresh vegetables, I love all the colors.  I was super happy!


Roasted Garlic- so good!  I could have ate it with a spoon.  I think it is a pregnancy thing.

Table of Food.  We never make big dinners like this.  I think we will start though.  It was so fun spending time in the kitchen with Keith creating such awesome foods!




Grilled Asparagus




Roasted Garlic Mashed Potatoes


My dinner plate- I struggled to finish.




I’ve never made potatoes before and was so thrilled the mashed potatoes came out perfectly.  Keith LOVED them!  Here is the recipe I followed below:

Roasted Garlic Mashed Potatoes From All Recipes

Servings:  8

Ready in:  1 Hour 10 Minutes


  • 1 medium head of garlic (we used 4 small)
  • 1 tablespoon olive oil
  • 2lbs russet potatoes, peeled and quartered (we used 3lbs and cut them in 2 inch pieces)
  • 4 tablespoons butter, softened (we used 5 tablespoons)
  • 1/2 cup milk (we used 3/4 cups milk)
  • salt and pepper to taste


Preheat the oven to 350 degrees.  Drizzle garlic with olive oil, then wrap in aluminum foil.  Bake in preheated oven for one hour.  Bring a large pot of salted water to a boil.  Add potatoes, and cook until tender, about 15 minutes (it took us about 20-25 minutes).  Drain, cool and chop.  Stir in butter, milk, salt and pepper.  Remove the garlic from the over, and cut in half (we didn’t).  Squeeze the softened cloves into the potatoes.  Blend potatoes with an electric mixer (I used our KitchenAid) until desired consistency is achieved. 

They were great and I usually am not a potato person.  I highly suggest making this recipe!
