Giveaway Winner, Weekend Recap & Fun Interval Workout

30 Apr

Whew, that was a long post title!

I’m going to get right to the winner of the Trader Joe’s / Target gift card, bars and makeup giveaway winner.

Congrats to Jenny!  Please email me at so I can get your package in the mail and let me know which gift card you prefer.  Smile

Friday-  This weekend seemed really long which was nice.  On Friday, we made salmon, brown rice and asparagus for dinner and relaxed at home while watching My Week with Marilyn.  I liked the movie better than Keith, but we both thought it was pretty slow.  I did like seeing Michelle Williams playing Norma Jean the real Marilyn.  I never knew a lot about Marilyn Monroe’s personality other than overtly sexy, so it was fun to see another side to her.  I also thought Michelle did an excellent job and now see why she was nominated for so many awards for portraying Marilyn Monroe.

Saturday-  On Saturday, we headed to the gym bright and early, followed by getting things done around the house.  We went to Bin 239 and both had Thai chicken salads for lunch.  We went to this particular restaurant to sit on their patio, but it was closed.  We were pretty bummed out.  When we asked to sit on the patio, the owner looked at us strangely and said, “it’s a mess out there, you know it just snowed two weeks ago.”  Ugh, yeah, two whole weeks ago and we hardly got any snow, you’d think it would be cleaned up by now.  But whatever.  Saturday night was spent grilling burgers and just hanging out with the baby!

Sunday-  Sunday morning the baby had us up wide awake by 5am, so we headed to Starbucks to enjoy skinny vanilla lattes, yum-o!  Afterwards, I headed into the gym alone while Keith watched the baby and worked out from home.  Once home we took the dog for a walk and got ready to head out for lunch.  We went to El Gato Azul, a tapas bar.  We ordered three tapas (hummus, fried avocado and crab quesadillas) but ended up having to cut lunch short and the baby started crying and wasn’t feeling being out and about.  Keith and I had been there once before a long time ago, but hadn’t been back since and I’m not sure why.  They have an awesome patio and a really fun vibe.  I’m sure we’ll attempt to go back this next weekend as there were tons of fun tapas we want to try!

The rest of Sunday was spent playing and entertaining the baby.  She hardly napped yesterday and was wide awake when bedtime rolled around.  I think it might had been because I ordered half caf at Starbucks and usually don’t drink any caffeine whatsoever.  We ended out weekend perfectly with a pasta dinner and The Real Housewives of New Jersey, since we’re classy like that!

Last week I was able to get in five workouts.  Here is a recap:

  • Monday- 45 minutes of cardio + core
  • Tuesday- 20 minutes of plyometric workout before calling it a rest day (the baby didn’t want to nap for long)
  • Wednesday-  Plyometric workout
  • Thursday-  Rest Day
  • Friday-  45 minutes of cardio + core
  • Saturday- 20 minutes intervals + legs, chest and triceps
  • Sunday-  20 minutes of intervals + back, biceps and shoulders

I think the only muscle group not sore on me is my triceps.  My workout got cut short at the gym on Saturday so I did triceps at home and didn’t get to work them as thoroughly as I would have liked.

Here is what I did for my interval workout on Sunday and I loved it!  It kept my heart rate up and challenged my body, plus since I was changing speeds so often it made the intervals fly by and it was fun!

Fun Speed Intervals Workout

Time  Incline Speed
0-1 0 4.0-4.2mph
1-2 0 or 1 8.2mph
2-3 0 4.0-4.2pmh
3-3:30 0 9.5mph

*You can repeat this about 6-9 times depending on if you are doing intervals for 20 or 30 minute intervals.  Also, since I’m not a natural born runner, these are the speeds that work for my body.  Adjust them according to your own fitness level and consult your doctor before trying out any new exercise program.

Thursday’s dinner, salad with a side of rice and beans topped with salsa

Lots and lots of smoothies

Friday’s dinner

That’s it for me today.  I have a super busy day planned and hope I can get everything done that I want too.  I’m taking today as a rest day as I mentioned above, every muscle group is sore on my body expect my triceps.   My body needs a break!

I hope you all are having an excellent Monday!

See you all tomorrow!

  • What is you favorite interval workout?
  • What is your favorite machine to do intervals on? Treadmill for me!
  • Do you like tapas?  What is the best tapas you’ve ever had?  The fried avocado was amazing!

Creamy Tropical Smoothie

29 Apr

Happy Sunday!  I hope you’re all having a great weekend!

If you’re catching up on posts from the past week, here’s what you missed:

And don’t forget to enter my giveaway to win a Target or Trader Joe’s gift card, plus other goodies!  Today is the last day to enter and I’ll announce the winner tomorrow morning!

If you’re a frequent reader of this blog, you know I’m all about the smoothies.  I’ve been mostly addicted to making citrus smoothies and banana berry smoothies lately, but a few days ago when I went to make a citrus smoothie for Keith and I, I realized we were out of grapefruit.  So I decided to tweak the recipe just slightly and what I came up with was amazing!  A-ma-zing!  Since, we’ve had a tropical smoothie the last three days, that’s how much we love it (plus, we’re still out of grapefruits)!.  Sadly, were now out of pineapple too, so I need to run to the store to get more.

Speaking of pineapple, it is one of my favorite go to summer snacks.  I love eating frozen pineapple after dinner for a dessert, or in smoothies to make me feel like I’m drinking the beach in a smoothie!  Smile

The first time I had pineapple after Cameryn was born, I noticed a rash on her stomach.  I figured it was the pineapple, although I wasn’t really sure and stayed away from it for a while.  When I decided to create a tropical smoothie, I really wanted to add pineapple and see if Cameryn would have a reaction to it.  Luckily she didn’t, so pineapple is back on the menu.

Tropical Smoothie

Serves:  2

  • 2 oranges, peeled and cut into 4 pieces (easier to blend)
  • 1/4 cup coconut milk or almond milk (unsweetened)
  • 1 scoop vanilla protein powder
  • 3/4 cup plain Greek yogurt (I like buying no fat)
  • 1 cup frozen pineapple chunks
  • 1 frozen banana (or more if you want to make it really creamy!)
  • 1 – 1 1/2 cups ice
  • Optional- 2 tbsp. flaxseeds or 2 tbsp. chia seeds

  1. In a blender, add all the ingredients in the order listed, oranges, coconut milk, protein powder, Greek yogurt, pineapple, banana and ice (and optional flaxseeds or chia seeds).  Blend until smooth.
  2. Serve and enjoy!

*If you need to, you can add in more coconut/almond milk, if the smoothie turns out too thick.*

This smoothie is so delicious and filling!  Not to mention packed with fiber and other  nutrients.

Pineapple is a good source of fiber, Thiamin, and Vitamins B6 and C.

Oranges are a good source of Fiber, Vitamin C, Thiamin, Folate and Potassium.

Bananas are a good source of Fiber, Vitamin C, Potassium, Manganese and also Vitamin B6.

I hope you test out this recipe and enjoy as much and Keith and I have been!

Question:  Are you a fan of pineapple?  What is your favorite way to eat it?
