Mid Week Eats and Workout Recap

Hey guys, here is a quick look at what I’ve been eating and doing for workouts this week!

And if you haven’t already entered my awesome giveaway, make sure you do!




  • Breakfast:  Coffee, kiwi, Ezekiel English muffin with spinach, egg and salsa
  • Lunch:  Berry banana smoothie and 2 tbsp. flaxseeds mixed with water
  • PM Snack:  Chocolate banana soft serve
  • Dinner:  Steak and salad
  • Late Snack:  A piece of dark chocolate and a frozen organic juice bar



Monday’s workout was 45 minutes on the elliptical at home followed by 15 minutes of core work




  • Breakfast:  Coffee, kiwi, Ezekiel English muffin with spinach, egg and salsa
  • Lunch:  Citrus smoothie and 1 piece of dark chocolate
  • PM Snack:  Chocolate banana soft serve
  • Dinner:  Caesar salmon, brown rice and sautéed spinach with cranberry (pure) mixed with water (plus I snacked on some raw chickpeas leftover from Monday’s night salad while making dinner)

Tuesday’s workout was going to be a plyometric workout but I only ended up doing about 20 minutes of it before the baby woke up and wanted to be held.  I was waiting for her to go down for her afternoon nap to finish it up, but that didn’t happen.  So I decided to take Tuesday as an unplanned rest day.  With a baby, you just need to go with the flow!

I plan on doing my plyometric workout Wednesday (today).


Quick Look Recipes

I’ve been getting some comments and emails about my smoothie recipes so here is a quick guide to the smoothies I’ve been making as well as the soft serve.

Berry Banana Smoothie:  1 frozen banana, 3/4 – 1 cup frozen berry mix, 1 cup almond or coconut milk (unsweetened), 1 scoop vanilla protein powder and about 6-8 ice cubes.  You can also add in flax or chia seeds if you wanted to add in extra fiber and benefits).  Blend all ingredients together.

Citrus Smoothie:  1 frozen banana, 1 grapefruit, 1 orange, 1/2 – 3/4 cup plain Greek yogurt, 1 scoop of vanilla protein powder and about 6-8 ice cubes.  Blend all ingredients together.

Chocolate Banana Soft Serve: 1 1/2 bananas, 1 cup almond or coconut milk (unsweetened), 1 scoop vanilla protein powder, 1 1/2 tbsp. cocoa powder (raw or regular) and about 6-8 ice cubes.  Blend in a blender or process in a food processor until smooth!

I’ve been loving fruit lately and can’t seem to eat enough of it.  I think I eat more bananas now that I ever had before, about 2 1/2 a day!  We go through so many in this house as Keith loves them too!  I love how they make smoothie/soft serve recipes taste so creamy!  I’ve been working on perfecting a chocolate banana pudding recipe, but it still needs some tweaks before I share it on the blog.  It is great for a sweet treat and would be a delicious healthy snack for kids!


That’s it for me right now, I’m off to do my plyometric workout and then run some errands.  We’re in need of a few vegetables for our salads tonight for dinner!

    awwww Cameryn looks so cute in that outfit!!!! Her cheeks are to die for!
    My favorite fruit is… wow that is hard to answer! seriously… haha I love them all! If I had to go with one I would probably pick a banana just because I use them so often…. but strawberries, mango, pineapple, peaches, raspberries, clementines…
    my favorite smoothie recipe right now is your citrus smoothie! Your berry banana smoothie looks delicious too! Do you just use that huge Costco mixed berry bag? I want to buy one but we have no room left in our freezer. (We decided to pass on the house 😦 we were fighting the lead singer of Boyz II Men for it… and apparently he was willing to pay more than we were even after they told us the house was ours. So we are still house hunting… but it might be for the best just because the timing was not the greatest being so close to my DD. Sorry to write this in a comment… I just don’t think I am going to put it on my blog!)
    And back to your post… haha I think a frozen banana is a must have in smoothies… I don’t remember the last time I made one without it!

      Her cheeks are the best! I kiss them at least 100 times a day!

      I love bananas too, we use them a lot in our house too.

      Sorry to hear of your house situation, I know how excited you were to move in. It must have been a great house if you guys were going against the lead singer for Boyz II Men. I know it probably is a bummer, but something better will come along. Are you guys buying or renting? We are renting out in AZ since we own a home back in MPLS. The day Cameryn was born we got a notice that the owners were letting the house foreclose. So, the house we’re renting Probably won’t be our home for too much longer. I am super bummed as I love it so much, especially the kitchen and our bedroom and we’ve been here for years, so it really feels like home. I’ve been stressing about finding something else but haven’t liked anything so far. So it looks like we are both going to be house hunting. Everything happens for a reason though!

        Oh my gosh I am so sorry to hear about your house too 😦 That must be frustrating knowing that the owners are just letting the house foreclose. I would be frustrated that your rent payments weren’t basically paying for the house… but I guess I don’t know all the rules about renting etc. And from all your pics your house looks pretty amazing! Is it a track home?
        We would also be renting that house we lost. Now I have a bad taste in my mouth when I think about Boyz II Men! haha even tho he didn’t do anything to intentionally harm us- I just am a tiny bit bitter about it! We have also been looking into buying as of last night, but we’ll see what happens.. we’re looking at mostly track homes now… in the LA suburbs and again down in Orange County.. the farther we go out from LA it seems the better quality house and the less expensive. And I don’t mind being a little bit farther out to have a nicer house- I just like to be close to Whole Foods, yoga, and fun things to do! So I guess we sure will be house hunting at the same time and soon enough moving with a baby! You are right tho, everything happens for a reason 🙂

        The house we live in isn’t a track home. We looked at some model homes last weekend to see about building a home, but will take a minimum of 8 months, way too long to wait for. I’m with you on moving farther away to have a better house! I love that you just like having a yoga studio and whole foods close by!

        You’re getting closer to baby time! Any day now! I hope time is going by quickly for you these last few days before Hayden arrives!

    That salad looks awesome. Wow, I like to go out to eat for salads because I just don’t have the ingredients, time or energy to make them look as good as that. You are more then welcome to come to upstate and make them for me though 😉
