Recipe: Easy Crockpot Green Chili Chicken

Moving into a new home that has been undergoing construction projects this past month hasn’t been the easiest when it comes to meal planning.  For example, I made this recipe when we were out a kitchen sink for about a week.  Trying to cook healthy fun tasting meals without a kitchen sink is not fun.  Cooking with a crockpot without a kitchen sink is fun though!

Since Keith and I are big Mexican food lovers I thought we would love this recipe from the start.  I originally found it on Pintrest, but decided to do a few minor tweaks and it turned out fabulous.  All you need is a couple tortillas and any taco fixings you desire as well.  This is a simple and straight forward recipe that tastes amazing and will warn your stomach on a cold fall day!  Smile



Easy Crockpot Green Chili Chicken

Adapted from: Semi Homemade Mom

Serves:  6-8


  • 4-5 chicken breasts (about 2lbs)
  • 1 packet of taco seasoning
  • 1 box of cream of chicken soup
  • 1 1/2 cups salsa
  • 2 small can green chilies
  • 3/4 cup 0% plain Greek yogurt


In a crockpot, layer chicken and taco seasoning.  In a bowl, mix together cream of chicken soup, salsa and green chilies.  Layer the mixture over the chicken and taco seasoning.  Cook on high for approximately four hours or until chicken is no longer pink.  Once the chicken is fully cooked, stir in the Greek yogurt.

Serve on a tortilla and enjoy! 

I like eating mine with a little cheese melted on the tortilla or making a stuffed avocado with it!  Smile



I made this recipe last Sunday for football Sunday in our house.  We liked it so much, I made it again last night.  There’s nothing better than having an easy to prepare meal that taste great and is healthy over the weekend!  And like I mentioned above it is super easy, I love crockpot cooking!  Smile

    Ummm delicious! I love my crock pot and usually use it once or twice a week.

    That looks like some good Chicken! I would be sure to use real New Mexico Chili, though. I get mine from these guys:
