Easy Healthy Homemade Chicken Noodle Soup

With the temps starting to dip in Arizona (it has been in the twenties over night!), nothing tastes better this time of year than a hearty mug of warm soup.  Don’t you agree?

Well, yesterday I set out to make a big pot of soup that would last us a few days and it turned out so great, I wanted to share the recipe with you!  Whether you’re looking for a chicken noodle soup recipe to help get over a cold or just want a warm bowl of comfort for dinner, this recipe is for you!


I hope you enjoy this classic recipe as much as I did!


Easy Healthy Homemade Chicken Noodle Soup

Serves:  4-6


  • 8 cups chicken broth
  • 1 box cream of chicken soup
  • 2 cups of water
  • 2 TBSP olive oil
  • 1 medium yellow onion, chopped
  • 4-5 large whole carrots, sliced
  • 4-5 large celery stalks, sliced
  • 1 TBSP crushed garlic
  • salt
  • freshly ground black pepper
  • thyme
  • crushed red pepper
  • 2 chicken breasts, fully cooked and shredded
  • 1/2 lb. whole wheat fusilli pasta, cooked and drained
  • 1 lb. spinach, fresh or frozen


1.  In a large stock pot, bring 8 cups of chicken broth, cream of chicken soup and water to a boil.  While waiting for the liquid to boil, sauté in 2 TBSP of olive oil the onion, carrots, celery and crushed garlic.

2.  Once the vegetable are starting to become tender, transfer the mixture to the liquid.  Add in the shredded chicken.  Season to taste with salt, freshly ground black pepper, thyme and crushed red pepper. 

3.  Once the soup is boiling, add in the noodles and spinach.  Reduce to a simmer and let simmer for about 15 minutes. 

Serve this comfort soup with a side salad and some crusty bread!  Enjoy!
