Steak and Arugula Salad

Remember in my last post when I mentioned I bought not one but six Ina Garten cookbooks at Costco?  At only $20 a piece I thought they were a steal.  I had mentioned to my husband I was so tired of all the same old recipes and meals we were making and I wanted to start really planning out recipes for the week as well as trying new recipes and making a nice Sunday dinner.  So, when I spotted these cookbook at Costco while looking at books for Cameryn it was a major score!

This was the second recipe we tried and the first I’m excited to share with you!

Steak and Arugula Salad

Adapted from Ina Garten

Serves:  4



  • 1 1/2lb flank steak
  • 1/2 cup olive oil (and a bit more for the steak)
  • sea salt and black pepper
  • 1/4 cup fresh squeezed lemon juice
  • 1 1/2 tsp. Dijon mustard
  • 12 cups arugula, rinsed and dry
  • 1/2 cup shaved Parmesan –Reggiano


  1. Grill the flank steak to your liking.  Once done cover tightly with foil and let sit for 10 minutes.
  2. White the flank is sitting, mix the olive oil, salt and pepper to taste, lemon juice and Dijon mustard.  In a salad bowl, toss the arugula and dressing together. 
  3. Cut the flank into thin strips.
  4. On a plate place the arugula, steak and add shaved Parmesan-Reggiano on top!
  5. Enjoy!


This salad is simple and elegant and has nice flavor pairings!  It is my favorite salad of the moment!  I can’t wait to eat it again soon!  I give Ina two thumbs up!

I would even recommend this salad if you are vegetarian and leave off the meat or vegan and leave off the cheese as well!
